BLACK-EYE PEAS
  • 1# dried black-eye peas washed and sorted
Put in bath of boiling water to which has been added 2 or 3 bullion cubes, cover with at least 1” of water, turn off the heat, place lid on top and let sit for 1 hour.

Meanwhile, Saute
  • 2 or 3 ribs of celery (chopped)
  • 1 large onion (chopped)
  • 1 green pepper (chopped)

In olive oil ¼ Cup or more…with 2 or 3 garlic cloves (minced) and let sit till peas are ready.
2 or 3 ham hocks
When the hour is up, add all other above ingredients and cook beans until soft. Salt and pepper to taste.
To serve: Drizzle with about 1 Tablespoon olive oil, and either cider or Sherry vinegar and add chopped onions.
